September Weather Food Cast on LMFM

We made some lovely Spicy Tomato and Basil Soup, homemade beans,  a fish bake with tomato sauce and a cheese herb crusted salmon dish.  Lots of quick and simple dishes to warm the soul after a long day at school.

Spicy Tomato & Basil Soup


1 onion, diced

1 garlic clove, chopped

1 tsp tomato puree

½ tsp dried chilli flakes

1 tin of tomatoes

250ml chicken stock

1 tsp sugar

Salt & Pepper

Fresh basil leaves, torn

A glug of oil

Optional: a dash of cream


Sweat off the onion with a little salt until softened and then add the garlic.

Add the tomato puree and chilli flakes and cook out for a few moments.

Pour the tin of tomatoes in with the sugar. Bring to the boil and add the stock.

Boil for 5-10 mins or until the flavour has developed. Blend until smooth and check for seasoning. Add a dash of cream if desired and the basil.

Tomato Sauce
2 tablespoons olive oil½ an onion, finely chopped1 garlic clove, crushed

400g can chopped tomatoes

1 tsp sugar

Salt & Pepper

  1. Heat the oil in a saucepan, gently cook the onion and then add the garlic until soft (not coloured, about 5 mins).
  2. Stir in the tomatoes and sugar.
  3. Bring to a simmer, cook gently for 15-20 minutes

Cheese & Herb Crusted Baked Salmon

 Serves 4 Ingredients:4 fillets of Salmon

50g Breadcrumbs

3 tblsp grated Parmesan or Strong Cheddar

50g Butter, melted

Salt & Pepper



Place all the ingredients apart from the fish into a bowl and combine.

Place the fish onto an ovenproof dish & top with the  breadcrumb mixture

Place in the oven for 15-20 mins depending on the thickness of your fish








Tomato, Parmesan & Spinach Crunchy Fish BakeThis recipe could be in the “Cooking for kids” chapter as all the kids who come to our cookery camps love it!Serves 4


600g mixed fish

2 tblsp tomato puree

1 tin of tomatoes

100 mls water

1 tsp sugar

1 tsp Soy sauce

1 courgette, sliced

A handful of Flat leaf parsley, chopped

75g Breadcrumbs

50g Parmesan, grated

A good knob of butter

Salt & Pepper


Preheat the oven to 160˚C

To make the sauce, place the tomato puree in a pan over a medium heat

Cook for a moment and add the tin of tomatoes, whisking

Add the sugar, soy & water and allow to bubble for a couple of minutes

Place the fish in an oven proof dish with the courgette & parsley

Pour the sauce over the fish

Scatter the breadcrumbs & parmesan over and dab the butter on in 5 or 6 places

Bake for 25 mins or until the fish is cooked through. Serve with dressed mixed leaves.

Homemade Baked Beans

Hardly a recipe but delicious nonetheless!

Pop a tin of cannellini beans into a small ovenproof dish and top with a generous portion the tomato sauce. Bake at 180˚C for 10-15mins. You can pop some grated parmesan on top before baking to make it a bit more robust!
